El propósito del estudio fue determinar niveles séricos de 16 fi toestrógenos por HPLC-DAD-ESI-MS como un refl ejo de su consumo reciente. Participaron 100 mujeres ≥ 25 años, quienes proporcionaron una muestra de sangre y respondieron un cuestionario de salud y otro sociodemográfi co. Los niveles séricos de fitoestrógenos más altos fueron para equol, kaempferol y luteolina (71,2, 50,4 y 18,7 nmol/L respectivamente). Los más bajos para matairesinol, secoisolariciresinol y formononetina (0,1nmol/L), refl ejando el consumo de una dieta que incluye frutas y verduras, alimentos de origen animal, y en menor proporción granos y cereales. Incluir en la dieta el consumo de fi toestrógenos representaría una alternativa para prevenir el desarrollo de enfermedades crónicas. Los niveles séricos de estos fi toestrógenos serían de gran utilidad en estudios epidemiológicos en donde se desee conocer su consumo.ABSTRACTEpidemiological studies investigating the association between phytoestrogens and health have been limited by the diffi culty in quantifying their consumption. The purpose of the study was to determine serum levels of 16 phytoestrogens by HPLC-DAD-ESI-MS as a refl ection of their recent consumption. The study involved 100 women ≥ 25 years, who provided a blood sample and completed a health and sociodemographic questionnaires. Serum levels were higher for equol, kaempferol and luteolin (71.2, 50.4 and 18.7 nmol/L). Lower levels were for matairesinol, secoisolariciresinol and formononetin (0.1 nmol / L respectively). These levels refl ected a phytoestrogens diet composed of fruits and vegetables, animal-derived food, and to a lesser extent grains and cereals. To include dietary intake of phytoestrogens represents an alternative to prevent the development of chronic diseases. Serum levels of these phytoestrogens would be useful in epidemiological studies where they attempt to know their consumption. ER -
